Stuffed Bell Peppers with Cheese


Ingredients:

4 large bell peppers (red, green, or yellow)

1 lb (450 g) ground beef or ground chicken/turkey

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup cooked rice

1 can (14 oz / 400 g) diced tomatoes (or tomato sauce)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika (optional)

1 teaspoon dried oregano or Italian seasoning

1 cup shredded cheese (mozzarella, cheddar, or a mix)

2 tablespoons olive oil


Instructions:

  1. Prepare the peppers

Wash the bell peppers and cut off the tops. Remove the seeds and membranes inside.

If needed, trim the bottoms slightly so they stand upright.

  1. Cook the filling

Heat olive oil in a pan over medium heat.

Add onion and garlic, cook until soft.

Add ground beef and cook until browned.

Stir in diced tomatoes, cooked rice, salt, pepper, paprika, and oregano. Simmer for 5–7 minutes.

  1. Stuff the peppers

Place the cleaned peppers in a baking dish.

Fill each pepper with the meat and rice mixture.

Sprinkle plenty of shredded cheese on top.

  1. Bake

Preheat oven to 375°F (190°C).

Cover with foil and bake for 25 minutes.

Remove foil and bake another 10–15 minutes, until cheese is melted and golden.

  1. Serve

Let them cool for 5 minutes before serving. Enjoy warm!
