Strawberry Cheesecake
Ingredients:
250 g digestive biscuits (or graham crackers), crushed
100 g unsalted butter, melted
500 g cream cheese, softened
200 ml heavy cream (whipping cream)
150 g powdered sugar (icing sugar)
1 tsp vanilla extract
250 g fresh strawberries, sliced (plus extra for decoration)
Chocolate shavings (optional, for topping)
Preparation:
- Prepare the crust:
Mix the crushed biscuits with melted butter until combined.
Press the mixture firmly into the bottom of a springform pan.
Place in the refrigerator for about 20 minutes to set.
- Prepare the filling:
In a large bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth and creamy.
Whip the heavy cream separately until stiff peaks form, then gently fold it into the cream cheese mixture.
- Assemble the cheesecake:
Spread half of the cream mixture over the crust.
Add a layer of sliced strawberries.
Spread the rest of the cream mixture on top and smooth the surface.
- Chill:
Refrigerate for at least 4–6 hours (preferably overnight) until firm.
- Decorate & serve:
Decorate with whole strawberries, whipped cream swirls, and chocolate shavings on top.
Slice and enjoy chilled. 🍓🍰
