Spinach & Feta Egg Muffins

Ingredients:

6 large eggs

1 cup fresh spinach (chopped)

1/3 cup feta cheese (crumbled)

1/4 cup milk

1 small onion (optional, finely chopped)

Salt and black pepper to taste

1 tablespoon olive oil or butter


Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Grease a muffin tin with a little oil or butter.
  3. Sauté the spinach in a pan with olive oil for 1–2 minutes until slightly wilted (optional but improves flavor).
  4. In a bowl, whisk the eggs with milk, salt, and black pepper.
  5. Add the spinach and crumbled feta cheese to the egg mixture and mix gently.
  6. Pour the mixture into the muffin cups, filling each about ¾ full.
  7. Bake for 18–22 minutes or until the tops are set and slightly golden.
  8. Let them cool for a few minutes, then remove and serve.
