Spinach & Feta Egg Muffins
Ingredients:
6 large eggs
1 cup fresh spinach (chopped)
1/3 cup feta cheese (crumbled)
1/4 cup milk
1 small onion (optional, finely chopped)
Salt and black pepper to taste
1 tablespoon olive oil or butter
Instructions:
- Preheat the oven to 180°C (350°F).
- Grease a muffin tin with a little oil or butter.
- Sauté the spinach in a pan with olive oil for 1–2 minutes until slightly wilted (optional but improves flavor).
- In a bowl, whisk the eggs with milk, salt, and black pepper.
- Add the spinach and crumbled feta cheese to the egg mixture and mix gently.
- Pour the mixture into the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes or until the tops are set and slightly golden.
- Let them cool for a few minutes, then remove and serve.
