Spinach & Cheese Puff Pastry Pie

Ingredients:

2 sheets of puff pastry

300 g fresh spinach (or frozen, thawed and drained)

200 g feta cheese (crumbled)

150 g grated mozzarella or any melting cheese

1 small onion (finely chopped) – optional

2 cloves garlic (minced) – optional

2–3 tbsp olive oil

Salt & black pepper (to taste)

1 egg (for egg wash)

Sesame seeds (for topping – optional)


Instructions:

  1. Prepare the Filling
  2. Heat olive oil in a pan.
  3. Add the onion and garlic (optional) and sauté until soft.
  4. Add the spinach and cook until the water evaporates.
  5. Remove from heat and let it cool slightly.
  6. Mix in the feta cheese and mozzarella.
  7. Add salt and pepper to taste.
