Raisin Cake with Glaze
Ingredients:
For the Cake:
1 cup (150 g) raisins
1 cup (240 ml) hot water
1/2 cup (115 g) unsalted butter, softened
1 cup (200 g) sugar
2 large eggs
1 1/2 cups (190 g) all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon (optional)
1/4 tsp salt
1/2 cup (120 ml) milk
1 tsp vanilla extract
For the Glaze:
1 cup (120 g) powdered sugar
2 tbsp (30 g) butter, melted
2–3 tbsp milk (adjust for consistency)
1/2 tsp vanilla extract
Topping:
Extra raisins for garnish
Instructions:
- Prepare the raisins:
Place raisins in a bowl and pour hot water over them. Let them soak for 10–15 minutes to soften. Drain and set aside. - Make the batter:
In a large mixing bowl, cream together butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract.
- Dry ingredients:
In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- Combine:
Add the dry ingredients to the butter mixture alternately with milk, starting and ending with the dry ingredients.
Fold in the soaked raisins.
- Bake:
Pour the batter into a greased and floured square or rectangular baking pan.
Bake in a preheated oven at 180°C (350°F) for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely.
- Prepare the glaze:
In a small bowl, whisk together powdered sugar, melted butter, milk, and vanilla until smooth and pourable.
Drizzle the glaze over the cooled cake.
- Finish:
Sprinkle extra raisins on top for garnish.
Cut into squares and serve.
