Pineapple Coconut Dream Dessert

Ingredients

For the base layer:

2 cups crushed pineapple (with juice)

1 cup shredded coconut

1 cup crushed vanilla cookies or graham crackers

1/3 cup melted butter

For the cream layer:

1 cup heavy whipping cream (or whipped topping)

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

For the pineapple topping:

2 cups pineapple chunks or crushed pineapple

1/4 cup sugar (optional)

2 tablespoons cornstarch

Toasted coconut for garnish


Instructions

1️⃣ Make the base

  1. In a bowl, combine crushed cookies, shredded coconut, and melted butter.
  2. Mix well and press the mixture into the bottom of a glass baking dish.
  3. Refrigerate for 15 minutes to set.

2️⃣ Make the cream layer

  1. In a mixing bowl, beat the cream cheese with powdered sugar and vanilla until smooth.
  2. In another bowl, whip the heavy cream until fluffy.
  3. Fold the whipped cream gently into the cream cheese mixture.
  4. Spread the cream layer evenly over the chilled base.

3️⃣ Make the pineapple topping

  1. Add pineapple, sugar, and cornstarch to a small pot.
  2. Cook over medium heat, stirring, until the mixture thickens.
  3. Let the pineapple mixture cool completely.
  4. Spread it gently over the cream layer.

4️⃣ Final step

Sprinkle toasted coconut on top.

Refrigerate for at least 3 hours (6 hours is even better).

Slice and serve cold.
