Chocolate Oat Bars

Ingredients:

3 cups rolled oats

1 cup unsalted butter

1 cup brown sugar

½ cup honey or maple syrup

1 teaspoon vanilla extract

1 cup chocolate chips (milk or dark)

½ cup peanut butter (optional but delicious)

A pinch of salt


Instructions:

  1. Prepare the base:
    In a large saucepan over medium heat, melt the butter, brown sugar, and honey together. Stir well until the mixture becomes smooth and slightly thickened. Add the vanilla extract.
  2. Add the oats:
    Stir in the rolled oats and mix until they are fully coated with the sweet mixture.
  3. Create the layers:
    Press half of the oat mixture firmly into the bottom of a lined baking pan.
  4. Make the chocolate filling:
    In a small saucepan (or microwave-safe bowl), melt the chocolate chips with the peanut butter until smooth.
  5. Assemble:
    Pour the chocolate mixture over the oat layer, then spread the remaining oats on top and press gently.
  6. Chill:
    Refrigerate for about 2–3 hours or until the bars are firm.
  7. Serve:
    Cut into squares and enjoy your chewy, chocolatey oat bars!
