(Cheesy Beef and Corn Skillet)
Ingredients
500 g (1 lb) ground beef
1 medium onion, chopped
1 red bell pepper, diced
1 orange or yellow bell pepper, diced
2 cups canned corn (or frozen corn)
1 cup shredded chicken (optional)
1–2 cloves garlic, minced
1 tsp paprika
1 tsp cumin
1 tsp chili powder (optional, for a spicy kick)
Salt and black pepper to taste
1 cup shredded cheese (cheddar, mozzarella, or a mix)
½ cup cream or milk (to make it creamy)
2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the ground beef and cook until browned. Drain excess fat if needed.
- Add the chopped onion, garlic, and diced bell peppers. Cook for 3–4 minutes until softened.
- Stir in the corn and shredded chicken (if using). Season with paprika, cumin, chili powder, salt, and black pepper.
- Reduce the heat to low. Pour in the cream (or milk) and stir well.
- Sprinkle shredded cheese on top, cover the skillet, and let the cheese melt (about 2–3 minutes).
