brioche-style bread
Ingredients:
4 cups (500 g) all-purpose flour
3 tbsp sugar
1 tsp salt
2 ½ tsp instant yeast (1 packet)
1 cup (240 ml) warm milk
¼ cup (60 g) butter, softened
1 large egg
For brushing:
1 egg yolk + 1 tbsp milk (egg wash)
Sesame seeds (optional)
Instructions:
- Activate the yeast:
In a small bowl, mix the warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
- Prepare the dough:
In a large bowl, add the flour and salt.
Pour in the yeast mixture, egg, and softened butter.
Mix until a soft dough forms.
- Knead the dough:
Transfer the dough onto a lightly floured surface and knead for about 8–10 minutes until smooth and elastic.
(You can also use a stand mixer with a dough hook for 5–6 minutes.)
- First rise:
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1–2 hours, or until doubled in size.
- Shape the rolls:
Punch down the dough to release air.
Divide into equal portions (about 16–20 pieces).
Roll each piece into a smooth ball and place them close together in a greased baking pan.
- Second rise:
Cover again and let the rolls rise for 30–45 minutes until puffy.
- Prepare for baking:
Brush the tops with egg wash (egg yolk + milk).
Sprinkle sesame seeds if desired.
- Bake:
Preheat oven to 180°C (350°F).
Bake for 20–25 minutes, until golden brown on top.
- Serve:
Let cool slightly, then enjoy the soft, fluffy rolls plain or with butter, jam, or cheese.
