Vegetable Soup


🥕 Ingredients:

2 carrots (peeled and diced)

2 zucchinis (diced)

2 potatoes (peeled and diced)

1 onion (chopped)

1 tomato (optional, diced)

1 cup green peas (fresh or frozen)

2 tablespoons olive oil (or butter)

1.5 liters water or vegetable broth

Salt (to taste)

Black pepper (to taste)

Fresh parsley (chopped, for garnish)


🍲 Preparation:

  1. Heat the olive oil in a large pot.
  2. Add the chopped onion and sauté until soft and slightly golden.
  3. Add the carrots, zucchini, and potatoes. Stir for a few minutes.
  4. Add diced tomato (optional) and cook for 2 minutes.
  5. Pour in the water or vegetable broth and bring to a boil.
  6. Reduce the heat and let it simmer for about 20–25 minutes until vegetables are tender.
  7. Add the green peas, salt, and black pepper. Cook for another 5 minutes.
  8. Garnish with fresh parsley before serving.
